Case Study: Macsween of Edinburgh
Macsween of Edinburgh have been pioneering Scotland's national dish, haggis, for 60 years. In the weeks leading up to Christmas, Hogmanay and Burns Night, there is a lot of pressure for the company to meet demand, providing their loyal client base with award-winning haggis.
Macsween of Edinburgh approached Dawsongroup with the requirement for a suitable temperature controlled facility for 8 weeks over the festive season. The inflatable cold store was identified as the ideal solution, offering the business a flexible alternative to traditional facilities.
Producing approximately 350 tons of haggis for Burns Night suppers alone, Macsween required one double inflatable and an additional single inflatable. The double inflatable was used purely as cold storage space, whilst the single inflatable was utilised as a chilled production area.
The inflatable cold store provided Macsween with an additional refrigerated 48 floor pallet spaces, strategically located within their existing units to minimise disruption to the manufacturing process.
